As part of an international chef exchange, Cap Maison welcomes Michael Bremner of award-winning Brighton (UK) restaurant 64 Degrees into his kitchen for one night only on Saturday, June 10. The event is part of an international chef exchange coordinated by the Brighton & Hove Food and Drink Festival.
According to the food festival’s site, Michael is currently competing for Scotland in his second stint on BBC2’s Great British Menu and has been recently featured on the show. His Brighton restaurant focuses on social dining with an open kitchen; the menu is ever-evolving with the aim of being engaging and accessible to everyone. 64 Degrees was ranked number 16 in the UK at the national restaurant awards in 2016.
“International Chef Exchange allows us to showcase the chefs, producers and wider gastronomic offering of Sussex to consumers and media across the globe”, says Nick Mosley, festival director. “We’ve worked all over Europe and as far afield as Canada to give food lovers a real taste of our city and county, and welcomed back top chefs in return for unique, one-off collaborative dinners”.
Guests of Cap Maison and residents of Saint Lucia will be treated to an elaborate and innovative six-course tasting menu that will include dishes such as chilled roast tomato consommé with a pesto dressed tomato salad and a crème fraiche spherification, and local caught Dorado with a Ridgeview English sparkling wine emulsion accompanied by almond and brown butter crumb.
